Creamy Tuscan Chicken Penne Pasta

This creamy Tuscan chicken penne pasta is a comforting one-pot meal that comes together in just 30 minutes! Pan-seared chicken, pasta, fresh spinach, and sun-dried tomatoes all tossed together with a garlic parmesan cream sauce. Sounds too good to be true for an easy weeknight meal, right?!

Ingredients
  

  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp garlic powder
  • 2 chicken breasts sliced into 1-2 inch pcs
  • 1 tbsp olive oil extra virgin
  • 2 tbsp butter
  • 3 cloves garlic minced
  • ½ large onion diced
  • 8 oz baby bella mushrooms sliced
  • ½ tsp crushed red pepper flakes
  • ½ cup 4 oz julienned sun dried tomatoes drained from oil
  • 4 cups 12 oz penne pasta dry
  • ½ cup dry white wine
  • 3 cups chicken broth
  • 1 tsp fresh thyme or ½ tsp dry thyme
  • 1 cup heavy cream
  • 3 cups fresh baby spinach
  • ¼ cup fresh basil chopped
  • 1 cup parmesan cheese finely grated

Method
 

  1. Place the chicken in a medium bowl, add the salt, pepper, and garlic powder. Using your hands, mix together to season the chicken well.
  2. In a large skillet, heat the olive oil over medium high heat. Once the pan is hot and the oil is glistening (just before the smoking point, add the chicken in an even layer. Let the chicken cook, undisturbed for 3 minutes to brown. Stir and cook for 2 more minutes, flipping the chicken. Remove to a bowl and set aside.
  3. Add the butter, garlic, onion, mushrooms and red pepper flakes to the skillet. Sauté for 3-4 minutes until soft.
  4. Add the sun-dried tomatoes and cook for 1-2 minutes. Add the thyme and then the wine to deglaze the pan. Allow it simmer and cook down for 3-4 minutes.
  5. Return the chicken to the pan, add the pasta, then the chicken broth and stir together. Bring the mixture to a simmer and cook for 10-15 minutes, stirring every few minutes to keep the pasta from sticking together and getting gummy. You can cover the skillet during these increments.
  6. Once the pasta is cooked through, stir in the spinach. Cover the pan for just a couple minutes to allow the spinach to wilt.
  7. Stir in the heavy cream, parmesan, and basil.
