One Pot Creamy Lemon Garlic Pasta

This creamy lemon garlic pasta is made in one pot and comes together in just 20 minutes, making it the perfect side or main dish for a weeknight meal! Pasta cooked to perfection in a light and creamy parmesan lemon garlic sauce. You'll love this recipe, it's simple and delicious!

Ingredients
  

  • 1 cup chicken broth
  • 1 cup water
  • ½ lb short pasta
  • 2 cloves garlic minced
  • ½ cup heavy cream
  • 2 tbsp butter salted
  • ½ tsp salt
  • ½ cup fresh grated parmesan finely grated
  • 1 tsp lemon zest about 1 small lemon
  • 1 tbsp fresh lemon juice
  • fresh cracked pepper to taste

Method
 

  1. Combine the chicken broth (1 cup), water (1 cup), and pasta (½ lb) in a medium skillet that has a lid. Cover and bring to a boil. Once boiling, reduce heat to medium low and let simmer for 10-12 minutes, removing the lid and stirring every 2 minutes to keep the pasta from getting sticky. Do this until the liquid is almost completely absorbed and the pasta is cooke through to al dente (or your preference).
  2. With the heat on low, stir in the heavy cream (½ cup), lemon zest (1 tsp), and minced garlic. Stir and cook for another 2 minutes until the cream is heated through and completely incorporated. Stir in the butter (cut into 2 tbsp) until melted.
  3. Turn off the heat. Stir in the lemon juice (1 tbsp) and grated parmesan (½ cup). Serve with more fresh grated parmesan.

Notes

*This recipe serves 2 people as the main course, but can serve 4 people as a side. If you double the recipe, I recommend using a shallow pot with high walls and a lid.
