What makes it an Italian House Salad?

There are a few simple things you can do to transform an everyday garden salad into an Italian house salad. The first is the most obvious—a homemade creamy Italian dressing, which we’ve already covered. It adds so much more flavor than anything you’ll find in a bottle.

Next, don’t skimp on the cheese. A generous handful of freshly grated Parmesan or Romano cheese tossed with the salad before adding the dressing takes it to the next level. Trust me, you’ll wonder why you haven’t been doing this all along.

How to make homemade creamy Italian dressing

A little chopping, a quick homemade dressing, and one good toss are all it takes to make this fresh Italian house salad.

  1. Add the mayonnaise, apple cider vinegar, garlic, sugar, salt, black pepper, and oregano to a medium bowl or glass jar. Whisk well until smooth and combined.
  2. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Alternatively, pour the olive oil into the jar, secure the lid, and shake vigorously until well combined.
  3. Toss with your prepared house salad and serve immediately. The dressing may separate as it sits, so simply whisk or shake again before serving.

Ingredients

  • 1 bell pepper red or orange
  • 1 cup grape tomatoes
  • ½ red onion thinly sliced
  • 1 cucumber sliced
  • 6 pepperoncini
  • 1 cup parmesan cheese grated
  • 5 oz your favorite lettuce mix about 8-10 loosely packed cups
Creamy Italian Dressing
  • 1 clove garlic minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp dried oregano
  • 1 tsp sugar or honey
  • 2 tbsp mayo
  • 2 tbsp Apple cider vinegar
  • cup plus 1 tbs olive oil extra virgin

Method
 

  1. In a medium bowl, whisk together the garlic, salt, black pepper, oregano, mayonnaise, sugar, and apple cider vinegar until smooth.
  2. While whisking constantly, slowly drizzle in the olive oil until the dressing is fully emulsified and creamy.
  3. In a large salad bowl, combine the lettuce, bell pepper, grape tomatoes, cucumber, red onion, pepperoncini, and Parmesan cheese.
  4. Pour the dressing over the salad and toss well until everything is evenly coated. Serve immediately, or refrigerate the dressing separately until ready to serve. If the dressing separates as it sits, simply shake or whisk it again before using.
