Molten lava cake sounds far more intimidating than it is. I’d go as far as to say that this is one of the easiest desserts to make. Quick, simple, and incredibly indulgent. This is the only Lava Cake recipe I use and it’s by the Pioneer Woman. I stop searching once I find perfection.

Handy tip: Prepare Ahead!

Want to make these ahead of time? Follow the recipe instructions through step 4, cover each ramekin with plastic wrap, and place in the refrigerator until ready to bake. Take ramekins out of the refrigerator 30 minutes before baking. This may require an extra minute or two of baking time, check to make sure the sides of the cake are pulling away from the ramekins after 13 minutes.

Ingredients
  

  • ½ cup butter salted
  • 4 oz bittersweet chocolate high quality
  • cup powdered sugar
  • 2 eggs
  • 3 egg yolks
  • ½ cup flour
  • 1 tsp vanilla extract optional

Instructions
 

  • Preheat the oven to 425°. Microwave the butter and chocolate together for 1 minute. Whisk until mixed well and completely smooth. 
  • Whisk in eggs and egg yolks until smooth. Whisk in vanilla extract. Whisk in the flour until smooth.
  • Divide batter among 4 greased ramekins (I used baking spray, you can also butter).
  • Place the 4 cups on a baking sheet and bake for 13 minutes. Sides will be firm and separating from the edges of the bowl.
  • Remove from the oven and let sit for 1 minute. Then using an oven mitt to hold the ramekin in one and and a plate in the other, one at a time, place the plate over the ramekin to flip and invert the cake onto the plate.
  • Serve right away with vanilla ice cream!
